1) u can put in as big an engine as u like but it costs money and hikes up insurace, road tax etc. there are some pretty simple engine conversions that can be done i.e. 1.6ltr astra/cavalier engine that are pretty much straight swaps after engine mount conversion points are one to mount the engine on. but u need to do gearbox, transimssion, brakes, fuel lines, possibly larger radiatior, oil lines, maybe fuel pump from single point injection to multipoint injection, and ecu remap and the list still goes on potentially.
2) yeah power steering colum /rack needs to be installed onto the current steering colum. this is quite expensive to have done with new parts at a garage but u or one ur mates with mechanical knowhow could probs install working power steering salvaged from scrappers for under £100.
3) The lcd clock ur on about is from an oldskool astra?/nova GTI and requires the alamgamation of both ur current clock face and the lcd backing of the digital clocks with fibreglassin skills. then u need to cut off the standard dial wire block on the corsa wire loom so u can solder or use crimps to connect the appropriate wires to each other so the dials will work. Again this kinda depends on the ECU?, some are only programmed for mechanical clocks whereas others have both mechanical and digital capabilites so u may find the clocks dont work properly or at all.
4) biggest wheels u can have really without custom work done on widening the arches or coilovers that u can raise ur ride height is probs 16"-17" (ide say 16" to be on the safe side) if they have appropriate off-set/camber on em without gettin scrapping from wheel hittin inner wheel arche when u got peeps/weight in ur car.

to anwser points 1 and 2
yea fit a bigger engine, go for one that already has powersteering
that way you have most of the parts anyway and just need a powersteering steering colloum
easiest way to do powersteering is to fit EPS rather than PAS as this dosnt use hydraulics its an electric motor that helps move the steeringwheel, cheaper to do too
but still expensive lol
