you have no pads left by the sounds of it mate, take the drums off and have a look, new pads are cheap anyway. sounds as tho you need to do them soon if its making alot of noise when braking.

nahh they wont lock completely, but just carry a hammer with you incase you cant get the one off, you can then tap the drum with a hammer and they'l drop off. take the drum off first to make sure it is the pads that are worn, saves buying new pads and then having it turn out its not that thats the problem, but it sounds like the pads anyway, they might just need a clean or something...

Make sure you do not apply the handbrake when parking, as with the freezing temperature this could be what is locking your rear brakes up. The grinding noise could be salt or ice that has gotten into the drums, does this noise start to disappear after a few miles?
As suggested above, carry a hammer, it can be a very useful tool if the wheels lock up at work, just wallop either side of the tyre, or a fairly gentle tap on the outside of the wheels themselves, just where the shoes would be lying and off you go.
